Kinji Sushi Bringing Asian Fusion to Keystone

The highly anticipated Kindred Resort is preparing to unveil its culinary offerings in 2025, according to a press release from the hotel. Among its exciting additions is Kinji Sushi, the town’s first dedicated sushi and Asian fusion restaurant. It will be located steps away from the River Run Gondola, at the new 100 Dercum Square Buffalo property.

Chef Eric Berggren, a seasoned culinary artist with two decades of experience in California, Boston, and Colorado, will lead the charge at Kinji. His career spans prestigious establishments such as La Cachette in Los Angeles and L’Auberge Hotel Del Mar.

Rocky Mountain Hospitality, headed by Shervin “Shevy” Rashidi, is the restaurant group behind Kinji. Rashidi’s portfolio includes other local establishments like Sauce on the Blue, Quandary Grill, Sauce on the Rocks, Kucu, Inxpot Coffee, Enza’s Deli, and Kickapoo Tavern. 

Kinji will pay homage to traditional Japanese techniques while incorporating both local and global flavors. It will offer a carefully curated menu that blends traditional sushi with Asian-inspired fusion dishes. The venue will also be open for hosting private events. 

The Kindred Resort is a luxurious new development at Keystone’s River Run base area. The project includes a 107-room upscale hotel, 95 luxury residences, a spa, and retail shops. More than 85% of the Kindred Residences are already under contract, according to Sotheby’s.
