One of the country’s favorite sandwich chains is building up in Kyle, according to recent public records.

Set for 5200 S. FM 1626, Jimmy John’s will soon bring its fresh subs to the growing city. Construction records estimate a $250,000 budget for the build out of the cozy 781 SF space. If projections hold, the build out should be complete by May 1.

A franchise, this Jimmy John’s will be run by multi-unit franchisee Matt Weir of Weir Capital, LLC.

“We own some stores up and down I-35, so a Kyle location fit really well in our strategy,” Weir tells What Now Austin, underscoring Kyle’s rising star. “We are watching Kyle continue to grow, so we felt that it really needed a Jimmy Johns.”

Weir adds that the new location will serve as a potential opportunity for employees, already working at neighboring locations, to move up.

“This will be our 10th store,” Weir states. “Most of our stores are in or around San Antonio, and then up I-35 towards Austin.”

Weir eagerly adds that this store will be carrying hot sandwiches as part of the company’s trial run with the new item, a notable development for Jimmy John’s.

So, when will the store open?

“We are targeting early 2025,” Weir tells What Now Austin.

“Our founder, Jimmy, had two options after high school – head to the military or open a business. He opted for sandwiches, and in January of 1983, the first Jimmy John’s was opened in the college town of Charleston, IL,” the official website states.

“The menu consisted of four sandwiches, made just like they are today with hand-sliced meats and always fresh-baked bread.”

No opening date has been announced.
