Gus’ Sip and Dip in the Works at Former Hub 51 Space

The new concept from an experienced hospitality group is expected to feature an extensive cocktail list, along with sandwiches.

A new concept from an experienced hospitality group is planned for River North.

Gus’ Sip and Dip is coming to 51 W. Hubbard Street, Eater Chicago reports. The space was formerly occupied by Hub 51, a two-story restaurant and bar which closed in June after 15 years.

Now, Lettuce Entertain You Restaurants is bringing something new to the space. Founded in 1971 with the opening of R.J. Grunts, the Chicago-based, family-owned hospitality group is the team behind more than 110 restaurants and 60 brands across the U.S.

The name of the new concept is inspired by Gus’ Good Food, an Italian restaurant that opened at the site in 1906. Gus’ Sip and Dip will feature cocktails from award-winning beverage director Kevin Beary, of Three Dots and a Dash. The food menu, expected to include dipped and traditional sandwiches, comes from Chef Bob Broskey.

Beary told What Now Chicago that Gus’ Sip and Dip is expected to open in late October or early November.
