A restaurant with Filipino-Hawaiian inspiration is planned for Fishermen’s Terminal.
Pidgin Cooperative is planned for 3909 18th Avenue W, Seattle Magazine reports. It has operated as a pop-up and farmer’s market stand before pivoting to rebrand as a worker-owned cooperative and focus on opening a restaurant, according to the news outlet.
The concept comes from brothers Seth and Zachary Pacleb. Pidgin Cooperative, formerly known as Brothers & Co., is expected to serve ramen and noodle dishes, smash burgers, koji fried chicken and more, with a focus on farm-direct ingredients.
“With our newly acquired brick and mortar space, we will double down on our efforts to create highly intentional food while providing a casual and comfortable dining experience,” according to an Instagram post about the upcoming location.
A Kickstarter campaign is launching to drum up support for the project.
They are targeting a summer 2025 opening for Pidgin Cooperative at Fishermen’s Terminal. The space was formerly occupied by Highliner Public House, which closed earlier this year.
