Bobby Boy Bakeshop Owner Bringing New Pizzeria To Winston-Salem

On the heels of opening a second Bobby Boy Bakeshop location, owner John Bobby is planning a new concept at the same location. Grandpa Joe’s will join the Salem Bottleworks development at 845 South Poplar St. in Winston-Salem this summer.

The pizzeria will be one of a few concepts Bobby is bringing to the development, and the recently opened Bobby Boy Bakeshop will serve as the central spoke for the other restaurant concepts. The team plans to use the production facility for the bakeshop to fuel the other restaurants.

“We have created a multi-concept unit that is focused on low waste and cross-utilization of products so you are constantly supporting yourself,” Bobby told What Now Charlotte.

The pizzeria will use the bread production facility from Bobby Boy Bakeshop to produce the bread portion of the pizzas. The sauces will be made in the commissary kitchen, and they have also built out a butcher facility, where they will produce fresh sausages and pepperonis for toppings. Customers can expect slabs of fluffy, light focaccia on the menu, alongside chilled seafood salads, beers and negronis on tap, and soft-serve ice cream.

Bobby is targeting a July opening for Grandpa Joe’s.

Formerly a Coca Cola bottling plant, the Salem Bottleworks has been undergoing redevelopment in West Salem. Bobby will be bringing a couple more concepts to the development later this year. He is looking forward to rolling out his concepts over the coming months.

“We had the right opportunity, and we took some things that were on the back burner and took them right up to the front pretty quickly,” Bobby said.
