Ebi Sushi in Somerville’s Union Square to Move Across the Street with New Ramen Concept

The local sushi bar is moving to Prospect Street with a new ramen restaurant in tow.

It looks like a longtime sushi staple in Somerville‘s Union Square is gearing up for some exciting changes.

After more than 14 years at 290 Somerville Ave, Ebi Sushi has filed permits to move across the street into the 10 Prospect Street building at 6 Prospect St. Right next door, a brand-new ramen restaurant called Dashizen is set to open at 8 Prospect St.

Both concepts will be led by chef-owner Jose Garcia and his wife, Estefania Ladner. Originally from Puerto Barrios, Guatemala, Garcia moved to the U.S. in 2000. Following eight years as the chef at Bluefin in Porter Square, Garcia opened Ebi Sushi with Ladner in 2011.

In an email exchange with What Now Boston, Ladner confirmed the news. “We are super excited for the upcoming project,” she wrote. The team hopes to share more details next week once the official press release is finalized.

Permits indicate that the two restaurants will share a spacious 5,100-square-foot space, outfitted with dual commercial kitchens connected at the back, plus a new bar and plenty of seating for both sushi and ramen fans.

Regulars can expect Ebi Sushi’s popular lineup of classic and specialty rolls, along with donburi bowls, dumplings, shioyaki fish, hearty soups, and assorted meat and seafood plates.

Dashizen’s Facebook page promises “handcrafted ramen with a story,” meant to nourish “your soul, not just your hunger.” The new eatery is slated for a winter 2025 debut. It’s not yet clear whether Edi Ramen will close temporarily or remain open during the move.
