COS Food Truck Going Brick-and-Mortar

Moctezuma Mexican Grill will open a restaurant.

After three years of serving from their food truck, the family behind Moctezuma Mexican Grill is expanding into a permanent location in Colorado Springs. The new brick-and-mortar space is located at 1015 North Academy Boulevard, according to liquor licensing records.

This new spot is more than five miles from the truck’s typical parking space at 5690 North Union Boulevard. The address is the same as a former Boston Market cafe, which was seized for unpaid taxes in 2023, a KKTV article claims.

The company did not return a request for comment. They also haven’t publicly confirmed anything, but teased in a May post that there is a “huge announcement coming up in a few weeks.”

Owned and operated by Jose Santos Colmenares Jr., his brother Roberto Colmenares, and their father, Jose Santos Colmenares, the business offers fresh, authentic Mexican fare. Jose, a California native and Army veteran, was stationed at Fort Carson and later trained under a chef friend in Guadalajara, the business’s website explains.
