West Highland will welcome new culinary options soon, with the Denver Business Journal reporting news that the space at 4140 W 38th Ave. will become a dual-concept. What begins as a bodega by day will then transform into a nighttime bistro coined Wednesday Ellie.
Both concepts come from American Elm (which is right next door) owner Bob Reiter. He has owned the property since purchasing it in 2021, after opening American Elm in 2019, according to Business Den.
Wednesday Ellie will open later this year. It will be a European-style wine bar, occupying 550 square feet of a building. It will operate Wednesday through Sunday from 5 to 10 p.m., serving drinks and small plates. Mangin told What Now Denver the menu will focus on the Iberian Peninsula and coastal Europe, including France, Italy, Spain, and Portugal.
There will be some overlap of staff with the neighboring restaurant, as the two have built a trusted team over the years. Mangin said they plan to have a tight-knit group of involved employees.
“The same person who might greet you at the front of the restaurant might be the person who put the last herb on your dish before it hits your table. And also might be the same person who’s going to recommend you an amazing bottle of wine,” he explained.
A bodega called M.E. Deli will share a small portion of the space, and will actually open first. That business will be a “complementary concept”, operating in the mornings to the early afternoon. It will have sandwiches, coffee, and snacks.
