Metabolic Brewing Company, a science-inspired craft brewery known for its experimental approach to beer, is getting ready to open in Chino at 5135 Edison Avenue, Suites 1 and 2.
The company’s second location, called Metabolic TapHaus, will replace the former I & I Brewing, according to a recent liquor license application. While an exact opening date has not been announced, owners David and Kathryn Fresquez have confirmed via social media that renovations are underway. Customers can expect an extensive tap list of experimental and traditional beers, as well as Hard Hop Waters, hard seltzer cocktails, and beer slushies.
Metabolic Brewing currently operates its flagship location in Ontario, where it has built a reputation for creative, small-batch brewing under a “mad science” theme. The husband-and-wife team behind the brand, both with healthcare backgrounds —David as a respiratory therapist and Kathryn as a nurse —founded the company to merge their passion for science and craft beer. Their Ontario taproom is open Wednesday through Saturday and serves as a hub for beer enthusiasts seeking inventive and approachable brews.
The upcoming Chino location will carry forward Metabolic’s playful, experimental identity but with a darker, more gothic edge. The owners describe the contrast between the two venues as “if Ontario were X-Men, Chino would be Batman: The Animated Series.” The TapHaus will feature 30 taps and a mix of moody, film noir-inspired décor that aligns with the brewery’s creative branding.
Menu highlights are expected to include a rotating mix of flagship and limited-release beers, such as the Märzen-style Schöpfungsfeier, Hyperbolic Doubt Brut DIPA, and Rosemary West Coast IPA, alongside lighter offerings like Hard Hop Water in flavors such as Fruit Punch, Pineapple Blackberry, and Prickly Pear Habanero. The brewery also plans to offer a Hibiscus Ale that can be served as a Jamaica Agua Fresca cocktail, providing a nod to the flavors that made the previous tenant popular with locals.
By opening in Chino, Metabolic Brewing continues its expansion across the Inland Empire, joining a growing wave of independent breweries redefining local craft beer culture. The addition of TapHaus will strengthen the brand’s presence in Southern California and provide a creative gathering place for longtime fans and new visitors alike.
