The Noodle Plug is opening for the first time, and it’ll be opening with the Bodega Moto. Noodle Plug will open in the community space that will house the Bodega Moto, which will live in the SA Yacht Club at 310 W. Grayson Street.
What Now San Antonio recently wrote an article about the Bodega Moto opening and reached out to The Noodle Plug owner, Josepha Ballista, for further details.
“I want to open this place to explore some creativity and bring some fun stuff to the table,” Ballista said of the opening.
The Noodle Plug started operating as a food truck and quickly caught traction. The Japanese-born owner shares a love of both Japan and ramen with his son and took that passion to the next level with an opening. Now, he’s expanding on that love for the brothy soup dish.
“I’m tired every time I go on Instagram or TikTok, I see a place that looks awesome, and it’s in Houston or it’s in Austin or it’s in Dallas, and I’m like ‘hey man, we can do that, too,’” Ballista said.
The location will have a full opening in January when the Bodega Moto opens, but will start dishing out Ramen this November in the location.
“I’m tired every time I go on Instagram or TikTok, I see a place that looks awesome and it’s in Houston or it’s in Austin or it’s in Dallas and I’m like ‘Hey man, we can do that, too,’” Ballista said.
“It’s a labor of love, and making it at home isn’t the easiest thing to do.”
Offerings include Birria Soup Dumplings, Smoke Pork Belly Sandwiches, and more. Ballista said the plan is to rotate specials every week.
“I’m approaching everything from what I’d like to see what would get me excited, that’s how I’m really tackling this thing,” Ballista said.
