Chicory Owners Set to Launch New Restaurant in Downtown Olympia

The owners plan to open the new restaurant in the Market Flats building.

The team behind the Chicory is preparing to debut a new restaurant concept, marking the owners’ next move in Olympia’s dining landscape, according to The Olympian.

This comes after Elise Landry and Adam Wagner announced in October they plan to close Chicory at the end of December.

“Chicory as we know it will cease to exist, but we are committed to remaining a part of the Olympia community and food system. THIS IS NOT THE END FOR US!,” the owners shared via Instagram.

The new spot will sit downtown at 302 Capitol Way N., inside the Market Flats mixed-use building.

The outlet reported the space is still under construction, with window signage reading “Gold Standard.” A brief description hints at the menu, featuring biscuits, sandwiches, fried chicken, farm-fresh vegetables, baked goods, beignets and cold beverages.

While The Chicory prepares to close, many are eagerly anticipating the new spot.

“Love you Elise! You and Adam created a one of a kind experience in downtown Olympia! I look forward to seeing what’s next on your journey!” Nate Thomas commented on the restaurant’s farewell post.

“We will support whatever ventures you take on! This community LOVES you!!” Ossa Skinworks added.

“Hold those heads high; soak up these next few months. Your future is bright, my friends,” Beth Robinson said.

The owners told the outlet they expect to open early next year, though they haven’t announced an official date.
