Grater Grilled Cheese, a fast-casual grilled cheese restaurant known for its gourmet takes on classic comfort food, is preparing to open a new location in San Diego at 11975 Carmel Mountain Road, Suite 605.

The company’s newest site is set to move into the former Flippin’ Pizza location in the Carmel Mountain Ranch Town Center, according to documentation submitted to the San Diego Department of Environmental Health and Quality. While there is no exact opening date, the filings indicate that work on the space is underway. Customers can expect the brand’s signature lineup of grilled cheese sandwiches, loaded sides, and comfort food staples.

This will be the company’s fourth San Diego location and fifth overall, joining existing restaurants in Chula Vista, Mission Valley, Sorrento Valley, and Irvine. Grater Grilled Cheese has grown steadily since its beginnings as a food truck more than six years ago, eventually expanding into brick-and-mortar stores in busy commercial areas throughout Southern California. The Carmel Mountain Ranch location continues that pattern, offering access to a strong customer base and steady daytime and evening traffic.

The restaurant describes its approach as gourmet and chef-inspired, with a focus on comfort food and cheese-centered menu items. Grater Grilled Cheese highlights its Basic Five sandwich, a blend of five cheeses served on artisan sourdough, as the foundation for most of its signature variations. Other popular offerings include the Lobster Grilled Cheese, Chicken Pesto Grilled Cheese, and The Philly Grilled Cheese, along with burgers, loaded mac and cheese, and a long list of sides.

Customers will also find salads, kid-friendly options, and a variety of beverages, including sodas, coconut water, and kombucha. The restaurant offers a loyalty program called Grater Points, which awards 1 point per dollar spent and unlocks discounts and free items. Its mobile app provides order tracking and access to exclusive promotions.

This will be an excellent landing space for Grater Grilled Cheese, as Carmel Mountain Ranch continues to draw consistent foot traffic and serves a broad mix of residential and commercial customers. The company also offers catering options such as grilled cheese platters, salads, and mac and cheese trays, which may appeal to nearby offices and community events as the new site prepares to open.
