During a routine inspection conducted by the Tennessee Health Department on February 3, Thai Phooket Restaurant was flagged for several health code violations. Inspectors issued the restaurant a score of 77.

Thai Phooket Restaurant serves Thai curries, noodles, and salads, along with lunch specials. According to the report, the violations in the report were:

  • An employee was observed washing their hands, picking up trash from the floor, exiting and reentering the kitchen, and then putting on gloves to continue food preparation without washing hands again. The Person in Charge (PIC) was informed of proper handwashing procedures.
  • Par-cooked shrimp were found in the same pan as par-cooked beef, with blood present.
  • The report mentioned that cooked duck was observed stored in the same container as raw sausage, which was later embargoed.
  • The soup that had vegetables was measured at 126°F, and the chicken broth at 109°F on the stovetop. The PIC stated the items had been on the stove for one hour. The stove was turned back on to reheat items to at least 165°F.
  • Cooked shrimp spring rolls were measured at 65°F, and cooked vegetable spring rolls at 62°F. The items had been on the counter since noon. Garlic in oil was also seen on the counter at 75°F, reportedly since 9:30 AM. All items were embargoed.
  • Cut cabbage was observed on the counter at 64°F, with another pan measured at 68°F. The items were embargoed, the report noted.
Par-cooked shrimp were seen sitting in the same pan as par-cooked beef in blood. The shrimp were embargoed.

  • Cooked chicken skewers were seen thawing in Food Cooler #2 with a prep date of 9/1/25 and a thaw date of 9/3/25. The PIC stated the product was made on 2/3 and pulled to thaw the same day.
  • Wontons were observed with prep dates of 8/31 and thaw dates of 9/1, as well as additional wontons with no date marking. PIC date-marked items and wontons with no date were embargoed, as per the report.
  • Cream cheese wontons in Food Cooler #2 were labeled with a prep date of 9/3/25. The PIC stated they were actually made on 1/30. The items were embargoed.
  • An in-use knife was seen stored between the hoods on Food Cooler #2.
  • A gasket was falling off the middle door of Food Cooler #1, the report said.
  • The electrical outlets had grease buildup next to the hood system. Grease droplets had formed on the hood. More grease and grime buildup were observed on the floor beneath the cooking equipment.
