A Roman-style pizzeria is set to open in Ridgewood this spring.
Pizza by From Scratch, a new concept from the team behind the Italian restaurant From Scratch, will open at 192 E. Ridgewood Ave., just a few storefronts from its flagship location.
“What we offer is not really offered anywhere near us. I’ve seen a lot of places do Neapolitan-style pizza, the classic American pizza, but we’re doing something different,” Co-owner Filippo Santagati told What Now Philadelphia.
He continued, “It’s called Pinsa. It’s a traditional Roman-style pizza. It’s very, very, very light and bubbly. It’s not the classic, big circular shape but it’s more like an oval shape. It’s easily much more manageable for someone to order one themselves and finish it.”
Pinsa, a former menu item at From Scratch, became an unexpectedly popular seller but did not quite fit the restaurant’s dinner menu, sparking the idea for an offshoot spot.
“We introduced it on our menu a few years ago. We honestly didn’t know people were going to like it so much. We then realized that it was not really meant for us specifically here in this place [From Scratch], but maybe for another place, where it will be the main product,” Santagati said.
The pizza will follow the same recipe, with the same ingredients sourced from Italy and a 48- to 72-hour fermentation process, but it will now be cooked in an oven imported from Italy.
“We were doing these pizzas in a very similar oven, but nothing compared to what we’re going to be using for this new place,” he said.
In addition to pizza, Pizza by From Scratch will also offer focaccia sandwiches.
“We’re doing those big focaccia sandwiches and filling them to the brim. The focaccia we’re going to get from Italy, and obviously the cold cuts and cheeses, we’re going to get imported as well,” Santagati said.
Because of the location’s smaller size, Santagati said it will primarily serve as a takeout and delivery spot.
He is eager to reintroduce the pinsa to the community and serve it with high-quality ingredients.
“I’m excited because I enjoy what I do, and I’m a big fan of the food. Obviously, being Italian, it makes sense. Apart from it being good food, it’s also healthy food, high-quality food,” Santagati said.
