TBD Gimbap, a new gimbap pop-up in the West Village from Chef Jihan Lee and Launchpad Hospitality (the team behind Japanese temaki restaurant Nami Nori), is now open in the West Village at 31 Carmine St, New York, NY 10014.
An incredibly personal project, TBD Gimbap is inspired by Jihan’s Korean heritage. By blending childhood traditions with his own modern flair, Jihan has turned a simple comfort food into a heartfelt tribute to his family’s legacy. Designed for takeaway, the menu offers a selection of Gimbap – Beef Bulgogi, Spicy Pork, Tuna Mayo, Special Ham, Soy Garlic Tofu and Carrot Inferno. The menu will also feature hyper-visual surprise desserts, and in the weeks to come, limited-time special gimbap.
Housed in the former Postcard Bakery space, the intimate dining room has been completely reimagined with a minimalist, Scandinavian-inspired aesthetic. Offering 10 seats and a standing bar, the dining room features art of various mediums hand-selected by Jihan, including a neon sign saying “no soy sauce required” above the counter.
