Koko’s Restaurant & Tequila Bar is expanding, relocating to a larger Seabrook space to serve more diners.
The Latin and modern Mexican restaurant, owned by Alexi Torres and Gibran Moreno, is moving from 5 W. Myrtle Lane to 100 Market Street, according to business filings.
Koko’s also operates a second location, which opened two years ago in Seattle’s Capitol Hill neighborhood.
“We already have a location here [Seabrook], but it’s very small. What we did was upgrade to a bigger location because we get really busy in the summertime–incredibly busy. We have good business here, so it was needed. We’ll have a better kitchen, better location, so we can provide a better experience for the customers,” Moreno told What Now Seattle.
The new Seabrook location will continue the restaurant’s focus on scratch-made dishes and curated cocktails, drawing inspiration from the Pacific Northwest’s coastal elegance.
“We follow the same menu–same drink menu, food menu–to have consistency,” he said.
Koko’s offers a breakfast and lunch menu featuring omelets, carnitas benedict, burritos, pancakes, French toast, chicken and waffles, enchiladas and Huevos Rancheros.
For dinner, Koko’s features signature tacos like al pastor, Ahi tuna, prawn and octopus, along with entrees such as the “Chorizo Burger,” made with a beef patty, Mexican chorizo, mayonnaise, mozzarella, American cheese, fried jalapeño, tomatoes and lettuce; “Cioppino,” a mix of octopus, white cod, clams and mussels in a tomato-white wine broth; and “Poblano Halibut,” served with a creamy poblano sauce, peppers, corn, parsley oil, grilled zucchini and mango.
The Washington State Liquor and Cannabis Board recently approved the restaurant’s liquor license, and it will serve classic and fruit-infused cocktails.
Moreno is eager to stay part of the Seabrook community and grateful for the “big support” it has shown.
