Back in January, What Now San Antonio reported on plans for growing Italian fast-casual chain Piada Italian Street Food to open two locations in the greater San Antonio area. Piada is currently expanding across the country, where it had 70 locations in seven states (as of the January What Now coverage), with 19 already open in Texas, and now it’s filling in the gaps.

The brand’s expansion looks to be continuing with a new Piada Italian Street Food opening in Pflugerville, at 1608 Town Center Drive, Suite 100, part of Stone Hill Town Center.

A filing with the Texas Department of Licensing and Regulation shows plans for a $500,000 renovation of a 2,450-square-foot space. Work is expected to run from May 4 to July 1.

The menu on Piada Italian Street Food’s website is currently featuring the limited-time-only Burrata Marinara: “a chef-crafted take on our classic marinara, elevated with new roasted cherry tomatoes, fresh basil pesto, parmesan and cracked black pepper— topped with a full burrata ball, transforming our sauce into something entirely new.” There are also Pastas, Salads, Fit Bowls, and, of course, the namesake piada.

Baked on a stone grill and hand-rolled with fresh authentic ingredients,” these piada wraps come in varieties like the Avocado Piada (pancetta, arugula, mozzarella, fresh avocado, sweet corn & tomato, basil aioli), the Carbonara Piada (Penne pasta, parmesan alfredo, bruschetta tomatoes, pancetta, spinach, basil aioli and grated parmesan served with your choice of grilled, crispy or hot fried chicken), and the Parm Piada (Rigatoni pasta, housemade marinara, mozzarella, basil aioli and creamy parmesan served with your choice of grilled, crispy or hot fried chicken). You can also create your own!

“We are passionate about food and about sharing it with others,” says the Piada Italian Street Food website. “We believe in eating well even when we need to eat fast. Great food starts with a few simple, fresh ingredients and someone who knows how to bring the best flavors to life. Every Piada is run by a chef — not a manager — who will personally greet you as you step up to the stone.”

Opening in Stone Hill Town Center, Piada Italian Street Food would join community of nearby fast casual restaurants like Milk + Tea, In-N-Out Burger, Whataburger, The Kebab Shop, and Chick-fil-A.
