A new pasta spot has opened in Encinitas, California, bringing fresh handmade pasta to the community. The spot also offers over 75 pasta and sauce combinations that guests can mix and match. The shop also offers a monthly subscription with curated pasta meals.

Pastaria Vivi, a chef-led pasta concept, has opened its doors to the Encinitas community. It was founded by chefs Brandon Jennings and William Treff. The concept combines a pasta shop, casual dining, and an Italian retail market at Encinitas Village Shopping Center.

The concept is designed to make high-quality pasta easy to enjoy at home. Customers can pick up ready-to-cook meals or shop for Italian pantry items and specialty products. The space also has a communal table, a small pasta bar, and outdoor seating.

Pastaria Vivi offers a monthly “Vivi Pasta Box” subscription with curated pasta meals. The store also plans to include pasta-making classes, events, and an in-house flour mill by 2027.

“Pastaria Vivi was born from a simple belief: that handmade pasta should be a part of everyday life, not just a special occasion,” shares Co-founder and Head of Operations Brandon Jennings. “Encinitas has such an incredible community of food lovers, and we wanted to create a place where neighbors could walk in, grab something beautiful and delicious to bring home, and feel like they’re eating well without the effort.”

The menu at Pastaria Vivi focuses on handmade pasta that is made fresh daily. With over 75 pasta and sauce combinations, guests can mix and match. This includes pappardelle with Bolognese or ravioli with ricotta and spinach.

There is also a small dine-in menu with items like focaccia, burrata, and more. The dessert menu includes cannoli and tiramisu, offering guests a fulfilling sensory experience. The spot also serves vegan and gluten-free pastas.
