Thai Restaurateur Planning West Village Spot in Former Red Bamboo

Saolea will take the place of the iconic vegan spot, Red Bamboo

With multiple successful Thai restaurant concepts under his belt, Nop Shusang is part of a team planning to open a modern Thai-American concept called Saolea at 140 W 4th St. It will be located in the former Red Bamboo, which had been serving vegan food there for 24 years. The new restaurant will feature modern preparations of classic Thai dishes, according to a filing with Community Board 2. A sample menu included with the filing listed sections for appetizers, salads, soups, signature dishes, house specials, noodle dishes, and fried rice. While the signature dishes appear to be modern preparations, the house specials appear to be contemporary takes on Thai classics.

The official Instagram profile for Saolea said it would also serve a curated wine list, and ownership is seeking a beer and wine license. What Now New York has been able to contact ownership and is currently awaiting additional details, which will be published once received.
