Potbelly Sandwich Works is preparing to expand its South Florida with a new shop opening in Plantation.
PB Plantation Pointe, LLC recently filed permit applications with the Florida Department of Business and Professional Regulation to open a Potbelly at 1716 N. University Drive, Suite A. An opening date has not been announced.
Founded in 1977 in Chicago, Potbelly began when an antique store started serving toasted sandwiches to shoppers. The concept evolved into a restaurant and has grown into a national fast-casual brand known for its hot, toasted sandwiches, hand-dipped shakes, soups, salads, and freshly baked cookies. Favorite sandwiches include the signature Wreck, loaded with roast beef, turkey, ham and salami; and the Italian, packed with salami, pepperoni, capicola and mortadella.
The company was acquired by RaceTrac in 2025 but continues to operate under the Potbelly brand. Currently, there are more than 450 locations nationwide.
The Plantation restaurant is part of the chain’s ongoing growth strategy, which includes dozens of new locations across the United States. Potbelly has said it expects to surpass the 500-store mark as expansion accelerates in 2026.
