Slim Chickens is preparing to expand its presence in Central Texas with a new restaurant planned for New Braunfels, according to a permit recently filed with the Texas Department of Licensing and Regulation.
The project is planned for 1395 I-H 35 North Frontage Road, where an existing 2,897-square-foot restaurant will be renovated to accommodate the fast-casual chicken chain. Dan McGrath confirmed to What Now San Antonio that he is the franchise owner behind the upcoming New Braunfels location.
According to the filing, construction is scheduled to begin on September 1, 2026, with completion currently targeted for April 1, 2027. The renovation carries an estimated construction cost of $200,000.
The permit lists the scope of work as the renovation of an existing restaurant. The project is privately funded, with Big Star Hospitality listed as the property owner. Dan McGrath is listed as the owner contact on the filing.
Slim Chickens, founded in 2003 in Fayetteville, Arkansas, is known for its hand-breaded chicken tenders, wings, sandwiches, wraps, salads and Southern-inspired sides. The brand has expanded rapidly across the United States and internationally through a combination of corporate and franchise locations.
