PopUp Bagels to Open More Than 1200 Square-Foot Shop in M-K-T Heights

PopUp Bagels is opening a new location in The Heights. According to a recently filed permit, the new PopUp Bagels shop is expected to open in Building 1 of the M-K-T mixed-use development at 600 N Shepard, Suite 117 & 120.

The permit further details that The Heights PopUp Bagels construction project is planned for a September first start and is slated to wrap up towards the end of October this year. If all goes well with permitting and the estimated $350,000 construction project, the new Greater Houston region 1,240 square-foot PopUp Bagels should open by this fall.

Tory Barlett is the CEO of the brand. What Now Houston reached out to Barlett to find out more about the new opening and expansion plans. Unfortunately, we did not hear back by the time of this publication.

“At PopUp Bagels, our mission is fueled by passion and dedication: to craft unmistakably perfect bagels with no frills, using the essence of simplicity – crispy crusts, soft crumb centers, and an ideal proportion of seeds,” the PopUp Bagels website reads.

“Every bagel is a product of precision, from the high-quality ingredients in our dough to the meticulous proofing process and expert bake that achieves the perfect texture and flavor.”

PopUp Bagels was born in Westport, Connecticut, in 2020 as a pandemic-era hobby by founder Adam Goldberg. Bored with baking sourdough, Goldberg created a new bagel recipe, handed out hot bagels to friends and neighbors, and grew the local word-of-mouth operation into a multi-million-dollar brand backed by high-profile celebrity investors.

The brand scaled from a local pop-up borrowing restaurant space to permanent brick-and-mortar storefronts across the East Coast, New York City, and eventually expanded cross-country to states like California.

There are now nearly 50 PopUp Bagels locations across the country, including four in Texas. Houston only has one in the Town & Country Village. The brand debuted in the region this summer. Now, they’re embarking on bringing another eatery to the area.

What Now also reached out to Goldberg to find out more about the upcoming opening. Unfortunately, we did not hear back by the time of this publication.

PopUp Bagels offers hot, whole-oven-fresh bagels sold in packs with specialty cream cheese schmears, explicitly omitting pre-made sandwiches or individual bagel sales. They do not slice or make sandwiches; instead, customers follow the “grip, rip, and dip” style right from the bag. Customers can choose from a variety of options, including rotating selections like everything, plain, sesame, poppy, salt, and cinnamon raisin.
