Sewell Sweets, a Salem cake shop, is opening a second location at 12230 SW Broadway St, on the ground floor of the newly built Modera Beaverton apartment building. Husband-and-wife owners Cat and Chad Sewell are targeting an early 2027 opening for the Beaverton store.
The Sewells opened their original shop at 155 Liberty St. NE. in 2022, fulfilling a dream Cat had held since she was 13. The shop built a following through its Mousse Crunch pastries, a take on the French trompe-l’œil dessert style, designed to look convincingly like real fruit such as mangoes or apples, with a hardened shell that cracks audibly when bitten into, revealing a soft, sweet interior. The pastries have gone viral online, with customers regularly filming themselves biting into one and posting the reaction.
Beyond Mousse Crunch, the shop specializes in custom cakes for weddings and events, winning “Best Cake” from Oregon Bride in 2023. It also works as a wholesale supplier for the Enchanted Forest amusement park, the Marion Berries summer collegiate baseball team, and several coffee shops and restaurants. According to the Oregonian, the Sewells outgrew their original on-site kitchen early on and moved production to an off-site commercial kitchen capable of producing more than the Salem store alone can sell, making expansion a natural next step.
