Cut Club, Ethan Stowell’s Latest Restaurant Concept, Now Open At Hotel Max

The modern steakhouse offers prime cuts, an elevated raw bar and all-day dining

Hotel Max, Downtown Seattle’s music-centric hotel known for its creative spirit and connection to the city’s grunge scene, has announced the opening of its new neighboring restaurant, Cut Club, from James Beard Award nominee Chef Ethan Stowell. Located adjacent to the hotel’s ground-floor lobby, Cut Club will operate independently while offering Hotel Max guests and the Seattle community a new destination for modern steakhouse fare, cocktails and an energetic dining experience in the heart of downtown.

“From the beginning, Hotel Max has been a great partner in bringing Cut Club to Seattle,” said Ethan Stowell, chef and co-founder of Cut Club in a statement. “There’s a shared sense of energy and creativity between the hotel and the restaurant that made this collaboration feel like a natural fit. We’re excited to open our doors and create a space where hotel guests, locals and visitors can enjoy a great meal, grab a drink and experience a little more of what makes Seattle special.”

All-Day Dining: Cut Club is open for breakfast, lunch, and dinner — a full-day destination where the same care and quality carries through every service.

Happy Hour: Join Cut Club for a lively happy hour with rotating food and drink specials with select $9 beers, $10 Wine and $12 House Cocktails.

Oyster & Raw Bar: Fresh oysters, bluefin tuna crudo, hamachi, scallop crudo, jumbo prawn cocktail, beef tartare, and caviar service — the raw bar is built for grazing, sharing, and setting the tone for a great meal.

The Steaks: Grilled steaks are the centerpiece of the dinner menu. They source premium cuts from Double R Reserve and Snake River Farms, including filet, NY strip, hanger, ribeye, and porterhouse — finished with house compound butters, classic sauces, and your choice of add-ons like lobster tail, jumbo prawns, or seared scallops.

Beyond the Steaks: Dinner goes well beyond beef. King salmon, seared scallops, a double cut pork chop, and a wagyu burger round out
a menu with something for everyone — including a thoughtful vegetarian option.

Drinks: They offer a curated cocktail menu alongside a full zero-proof selection, so every guest has something worth sipping. The wine list and bar program are built with the same attention to quality as everything else on the menu.
