They already knew the neighborhood. Now, Boychik owners Charles Troup and Chase Devitt are giving it something new.
The pair is preparing to open Sorella, an Italian concept at Stanley Marketplace that will bring pastas, sandwiches, charcuterie and share plates to the Aurora dining scene, with a mid-November opening in sight.
“It’s gonna be an Italian concept doing delicious pastas, charcuterie, share plates, and sandwiches,” Troup told WhatNow.
Sorella, which means ‘sister’ in Italian, will operate as a counter-service restaurant inside Stanley Marketplace. Troup said the concept is being designed to work for different occasions, whether customers are stopping in for lunch, grabbing dinner or looking for a place to meet for a date.
“We think it will be great for lunch and dinner, a place you can go for date night,” Troup said.
The menu will offer a range of options, including Italian-style sandwiches, pastas, share plates and charcuterie. The idea is to give customers flexibility rather than build the restaurant around one particular type of meal.
Troup said the decision to open another restaurant at Stanley Marketplace was helped by the relationship the team has already built there through Boychik. “When an opportunity to do another space there came about, we were really excited because we feel really comfortable out there,” Troup said. “We feel like we’ve become part of that community.”
That familiarity also gave the partners a better sense of what they wanted to bring to the marketplace. “We saw a need out there for this type of concept,” Troup said.
The restaurant is intended to have something for different types of diners and occasions. Someone might stop in for a sandwich, sit down for pasta or order a larger charcuterie board for a gathering.
“So if you want a pasta, if you want a sandwich, if you wanna do a big charcuterie board for a holiday party, we feel like that was really a need out there in that community,” Troup said.
Sorella will give Troup and Devitt another presence at Stanley while taking the duo in a different culinary direction. Their Boychik restaurants focus on Mediterranean cuisine, while the new concept will center on Italian food.
The counter-service format is also intended to keep the restaurant approachable, while the menu will work for both quick meals and occasions where customers want to stay and eat.
For Troup and Devitt, Sorella is another step in growing their restaurant group, but it also gives them a chance to build on a community they already know. Sorella is targeting a mid-November opening at Stanley Marketplace. An exact opening date has not yet been announced.
