Bonnie Bagels & Co., a neighborhood café and bagel shop specializing in hand-rolled, cold-fermented East Coast bagels, celebrated its grand opening at 280 South Main Street in Sebastopol on Saturday, October 24.

The café, founded by long-time Sebastopol local Michael Sousa, offers kettle-boiled bagels in all the traditional flavors and a selection of gluten-free bagels. The cream cheese variety includes adventurous flavors like Caper Dill, Garlic & Herb, Jalapeño, Maple Pecan, Green Olive Medley and Chili Crisp, plus dairy-free options. Sandwich offerings include New York classics like Bacon Egg & Cheese, Classic Lox and Avocado Toast. In addition to breakfast and lunch sandwiches, Bonnie Bagels will also serve locally-sourced beer and wine. The café offers patio dining and a full espresso bar.

Executive Chef Gregory Kalergis, originally hailing from the Northeast, cut his teeth on French pastry and Neapolitan-style pizza before turning his attention to perfecting the East Coast bagel for Sonoma County.“Bonnie Bagels is named after Bonnie Lane, the street where I grew up in Lowell, MA. Chef Greg and I both come from the Northeast. We both still have strong connections to that part of the country and we love the bagel-making tradition of the East Coast. But we both moved to California to pursue our dreams and experiment with new culinary ideas. Bonnie Bagels represents a blending of bagels of our childhood with West Coast innovations,” said founder Michael Sousa in a statement.

Bonnie Bagels & Co. is open Wednesdays – Sundays from 7:00AM to 1:00PM.
