A new rooftop restaurant and lounge is set to open at Hotel La Jolla on November 11. Called Aries, the concept combines coastal cuisine with European seaside influences and will replace Sea & Sky, according to San Diego Magazine.

Located on the hotel’s 11th floor at 7955 La Jolla Shores Drive, the restaurant is operating under La Jolla Shores Restaurant LLC, according to public filings. AM Restaurant Holdings Inc. and GG Food Group Inc. are also listed in connection with the project.

Restaurateur Alessandro Minutella, whose portfolio includes Copper Cowboy, previously covered by What Now San Diego, Zama and AKA, is leading the project alongside co-managing partner Giancarlo Guttilla.

Aries will serve lunch and dinner daily, as well as weekend brunch. Its menu will draw on Pan-Pacific influences, while weekend evenings will feature live music and DJs. Beyond the restaurant, the group will oversee Hotel La Jolla’s food and beverage program.

The venue will include a main dining room with approximately 140 seats and a private dining room accommodating up to 80 guests.

The opening follows several changes at Sea & Sky, the hotel’s previous rooftop restaurant. The seafood-focused concept has had several chefs at its helm since 2024, including Anthony Wells, Ernest Lopez and Neil Dandekar, according to San Diego Magazine.
