Jacksonville is getting another sandwich option, with Sourdough & Co. preparing to open its first location in the city early next year.
The California-based chain is planning a restaurant at 7540 Gate Parkway, Unit 114, in The Palms at Gate Parkway shopping center, near Interstate 295 and Butler Boulevard. The new location is expected to open in early 2027, according to the Jacksonville Daily Record.
The restaurant will be operated by father-and-son franchisees Jim and Andrew Simak, who decided to go into business together after exploring several franchise opportunities. Jim, an assistant professor of management and entrepreneurship at Jacksonville University, was drawn to Sourdough & Co.’s food and saw an opportunity to introduce the concept to a growing part of Jacksonville.
The chain is known for its San Francisco-style sourdough bread, which serves as the foundation for much of its menu. Customers can expect a selection of sandwiches made with meats, cheeses and fresh vegetables, served on the brand’s signature bread.
According to the company’s website, sandwich options include pastrami, roast beef, turkey and chicken, with ingredients such as Swiss cheese, lettuce, tomatoes and house spread. The menu also features vegetarian options.
Beyond sandwiches, Sourdough & Co. serves soups, salads and macaroni and cheese. Its New England clam chowder is a regular offering, alongside a rotating soup of the day. Customers can order soup by the cup or served in a sourdough bread bowl. Salad options include familiar choices such as Caesar, Cobb, Greek and garden salads, while the macaroni and cheese is served with slices of sourdough bread.
The company places a strong emphasis on its bread, describing it as authentic San Francisco-style sourdough made without preservatives. Its bread is prepared using a sourdough starter associated with the city’s baking tradition.
The Jacksonville location is part of the brand’s wider expansion across the country. According to the media publication, Sourdough & Co. has more than 120 locations nationwide and is continuing to grow through franchising, with plans extending into Canada.
Plans for the Gate Parkway restaurant are also moving through the city’s permitting process. The publication reported that Jacksonville was reviewing an application to renovate approximately 990 square feet of space, with an estimated project cost of $274,881. Jacksonville-based Tenant Contractors Inc. is listed as the contractor, while JAA Architecture Inc. is handling the design.
The restaurant will join other businesses at The Palms at Gate Parkway, bringing another quick-service dining option to the South Jacksonville area.
Sourdough & Co. is targeting an early 2027 opening, although an exact date has not been announced. For more information about the brand and its menu, visit sourdoughandco.com.
