Indulge, a new restaurant coming to Las Vegas Motorcoach Resort, will start serving up its “diner fare with a modern flair” early in the new year.
“I’ve been a chef my whole life, and this is a great opportunity,” Chef Nicholas McBroom told What Now Las Vegas in a Thursday afternoon phone call, describing a restaurant that will serve familiar diner favorites at a level above what one might expect from a diner—but at a more than reasonable price.
The restaurant plans on a grand opening early in 2022, rolling out a menu of breakfast and lunch from 7 a.m. to 3 p.m., with dinner service to be added later. A renovation of the space, currently occupied by Johnny C’s Diner, is also expected over the course of several months.
The menu will keep things simple while allowing for personalization: for example, guests might choose between pancakes, waffles, and French toast with a selection of toppings: the usual suspects, plus seasonally themed ingredients. Guests can also go in direction of dishes like chicken and waffles or pork green chili, finishing off with world class beignets or maybe a root beer float. Meanwhile, daily specials will keep guests—and the chef—having fun.
“We will run daily specials where my cooks and I will have a lot of exciting creative freedom,” McBroom said.
With beer and wine choices also on offer, Indulge brings the whole package to the table. And to complete the picture, it will emphasize another of McBroom’s passions: the sauce.
“Every restaurant needs to have a sauce program,” the chef said. “It makes everything better. You go to a restaurant, and you want a saffron aioli, and they only have ketchup!”
Indulge will provide discounts and deliveries to the resort’s owners and renters, as well as a rewards program available to the public. Its food will be available for delivery as well, “on every online platform known to man,” McBroom said.
