Cookie Co., a growing cookie chain, will soon be opening in the Lakeline area of northwest Austin, according to a recent filing with the State of Texas. The restaurant will be located at 10900 Lakeline Mall Dr., within suite 300, near eateries such as Panera Bread and Blaze Pizza.
“I have been looking into cookie franchises for several years and my wife and I have often enjoyed date nights at neighboring cookie places,” Franchisee Peder McOmber tells What Now Austin. “We once tried Cookie Co. and they were honestly the best cookies I’ve ever had.”
When asked about the menu, McOmber says “We offer a rotating menu, offering four different gourmet cookies a week. For example, right now we have a hostess cookie and a s’mores cookie that’s out of this world.”
“It’ll be a modern, open kitchen, everything made in house, and you’ll be able to see everything going on in the kitchen.”
Fortunately, curious readers won’t have to wait long for the store to operate.
“Depending on the permits with the city of Austin, we’re slated for an April or May opening.”
