A Ukrainian-owned specialty coffee roastery and bakery inspired by the traditions of one of Europe’s oldest coffeehouse cities is planning to open its first location in Leander. According to public filings, Lemberg Roastery & Bakery plans to open at 1900 S. Bagdad Road, Suites 101 and 102, within The Square at Crystal Falls.
What Now Austin reached out to founders Olha Haida and Nataliia Huk, who confirmed that the completion date is targeted for December 2026, pending permits and construction timelines.
The name Lemberg comes from the historic German and Austrian name for Lviv, a city in western Ukraine known for its centuries-old coffeehouse tradition. There, café culture has long been part of everyday life.
“Lemberg was born from a love of coffee, Ukrainian hospitality, and the traditions we carried with us from home,” the founders said. “From Ukraine to Texas, every bag of Lemberg is a connection between where we come from and the place we now call home too.”
The concept brings together the founders’ connection to Lviv’s café culture and the specialty coffee scene they discovered in Texas. The latter focuses on thoughtfully sourced beans, carefully developed roasts, and small-batch roasting that allows each coffee to express its character.
The bakery will add another layer of Ukrainian influence to the concept. Traditional Ukrainian pastries and baked goods made with flavors and techniques passed down through generations will accompany the coffee program, giving guests an introduction to a culinary tradition that remains relatively unfamiliar to many Texans.
For Haida and Huk, the combination of coffee and bakery builds on their previous businesses. Haida founded KavaOli, a small-batch coffee roastery deeply rooted in community, while Huk founded Smakota Catering, a service specializing in catering and bakery.
The Leander location will bring Lemberg to The Square at Crystal Falls, a growing retail destination in one of the Austin metro’s rapidly expanding suburban corridors.
