Bougie Pizza Co. to Replace Pizza Roma in Watertown

A new pizzeria is bringing slow-fermented sourdough and elevated toppings to Watertown.

One pizzeria is replacing another in the western suburbs of Boston.

According to Boston Restaurant Talk, Pizza Roma has closed its doors at 212 Waverley Avenue in Watertown, making way for a new concept called Bougie Pizza Co. It’s unclear why Pizza Roma closed, though the restaurant appears to have quietly ceased operations sometime within the past couple of weeks.

David Bourgeois, owner of Bougie Pizza Co., briefly confirmed the new concept with What Now Boston but has not yet shared additional details about the restaurant or its opening plans. However, the eatery’s website offers a teaser of what’s to come.

Bougie Pizza Co. promises “elevated pizza” made using a Neapolitan-style sourdough, with a slow fermentation process designed to create a tangy, flavorful crust with an airy texture. Signature pies listed by the restaurant include classics such as Margherita and Bruschetta alongside more unexpected options like Hot Salami and Unagi Steak. Gluten-free crust will also be available upon request.

“Great pizza begins with patience,” reads the restaurant’s website. “Our signature Neapolitan sourdough undergoes a slow fermentation, allowing wild cultures to develop a complex, tangy depth and that signature airy crust which defines our artisanal craft. Honoring Italian traditions with a modern luxury touch, we create unexpected flavor profiles—from timeless classics to bold, global fusions. Every ingredient is artfully selected, painting our favorite tastes onto the perfect sourdough canvas.”

Bougie Pizza Co.’s website highlights two packages designed to offer “artisanal quality and transparent pricing for guest lists of any size.” The first package costs $300 for setup, plus $20 per person, and includes unlimited sourdough pizzas in three different styles. The second costs $300 for setup, plus $25 per person, and adds an appetizer along with unlimited sourdough pizzas in four different styles.

Recent permits filed with the city provide a few more details about the planned restaurant. In addition to pizzas, the fast-casual, counter-service eatery is expected to serve sandwiches and salads. The roughly 600-square-foot space will include counter seating for four guests and have a total occupancy of 15.
