Fulton Market is getting another restaurant from one of Chicago’s best-known hospitality groups as Gibsons Restaurant Group prepares to open Gibsons Tavern.
The new location is planned for 925 W. Fulton Street, and is scheduled to open fall 2026.
Gibsons Tavern will bring a more relaxed, tavern-style concept to the group’s growing portfolio, with a menu centered on American comfort food, steaks and cocktails.
The restaurant is the latest concept from Gibsons Restaurant Group. It operates a collection of well-known Chicago restaurants. Its portfolio includes Gibsons Bar & Steakhouse, Hugo’s Frog Bar & Chop House, Quartino Ristorante, LUXBAR and several other concepts.
WhatNow Chicago, previously reported on the concept and revealed plans for the restaurant at the West Fulton Street address in 2022. At the time, the group had described the project as a new concept for the neighborhood, with plans for a tavern-style restaurant serving comfort food, steaks and cocktails.
Now, the group has officially put a name and opening timeline behind the project.
Gibsons Restaurant Group is also building team that will bring Gibsons Tavern to life. The company is recruiting hospitality and culinary professionals for the new restaurant and has been hosting an invitation-only event for selected candidates featuring cocktails, chef-curated bites and conversations about the concept.
While additional details about the menu and design have yet to be released, the tavern is expected to offer a mix of steaks, comfort food, cocktails and American favorites.
Gibsons Tavern will join the restaurant group’s growing presence across Chicago as it adds another concept to the Fulton Market dining scene.
