What If Syndicate’s Delilah’s to Debut in Gold Coast

The restaurant group behind Maple & Ash, etta, Kessaku and more will open a new eatery on N State Street.

What If Syndicate isn’t new to the restaurant business. The hospitality group, run by David Pisor, Jim Lasky, Molly Currey, Matt Winn, and Michelin-star Chef Danny Grant, has been in operation since 2015, spreading its restaurant brands far and wide across the country. Maple and Ash, the group’s flagship steakhouse, has locations in Chicago, Scottsdale, and soon Dallas and Miami.

What Now Phoenix recently covered the expansion of etta, the group’s wood-fired pizza and pasta bistro, to Scottsdale as well.

But What If Syndicate isn’t stopping there. The group will debut its newest concept, Delilah’s, in Chicago’s Gold Coast neighborhood, Danny Grant confirmed in a brief telephone conversation with What Now Chicago Thursday.

The eatery, which filed a liquor license for 847 N State Street, is not affiliated with Lincoln Park’s Delilah’s, a bar owned and operated by Mike Miller, a What If Syndicate rep confirmed.

What If Syndicate’s Delilah will replace the now-shuttered The Little Beet Table.

If the previous work of What If Syndicate is any indication, Chi-town is in for a real treat. “The business is built upon three units: The primary is a collection of dynamic, profitable restaurants; the second a restaurant incubator; and the third a private lifestyle club as well as a products program,” shares the group’s website. “Our restaurants and our teams deliver an experience beyond what is expected—that is the What If promise.”

Delilah’s Gold Coast will set up shop in the space that most recently housed The Little Beet Table. We were unable to confirm an opening date for Delilah’s Gold Coast, so you’ll want to keep an eye on What If Syndicate’s social media and website for more details.
