A Mexican taqueria known for its fresh, made-from-scratch tacos is expanding to The Colony. According to public filings, La Salsa Verde plans to open at 5333 SH 121, Suites 107 and 115, with a construction completion date targeted for the end of 2026.
What Now Dallas spoke to partner Justino Rodriguez and the team behind the project who confirmed the timeline may shift as approvals progress.
La Salsa Verde has built its reputation on fresh, authentic Mexican tacos made with quality ingredients. According to Rodriguez, The Colony was a deliberate choice. The restaurant’s team told What Now Dallas they prioritize areas with strong Hispanic demographics when evaluating new markets.
The expansion is a direct result of community loyalty. “Expanding to a new location is a direct result of the incredible support from our loyal guests. We are honored to bring our passion for real and fresh Mexican tacos to a new area,” the team told What Now Dallas, “We are ready to deliver the same high-quality food and hospitality that defines us, right here in this wonderful community.”
The Colony opening is just the beginning. La Salsa Verde also has plans to open additional locations in Arlington and on Spring Valley Road in Richardson, signaling an aggressive push across the Dallas-Fort Worth metro in the coming years.
