According to public filings, Waffle House plans to open a new, ground-up restaurant at 2210 Old Kemp Highway in Kaufman. Permitting records list a construction completion date of February 2028. However, dates listed in public filings are subject to change and are not always definitive.
Waffle House has been a fixture of Southern dining since opening its first location in Georgia, in 1955. The chain, known for its 24-hour service, hash browns “scattered, smothered, and covered,” and jukeboxes, has grown to more than 2,000 locations nationwide, with a particularly strong and expanding footprint across Texas.
What Now Dallas has been tracking Waffle House’s North Texas expansion in the last year, including new locations along North I-35 Frontage Road in Hillsboro, at the intersection of Milrany Lane and Highway 121 in Melissa, and in Rockwall. The Kaufman project is part of the chain’s broader regional buildout.
Kaufman’s opening also adds to a small but growing wave of new business activity in the city and surrounding areas. What Now Dallas previously reported on Eleanor’s Coffee Shop, a new drive-thru coffee concept planned for Kaufman Square, with owner Cantrell describing the city as an ideal market.
