An exciting new butchery concept is coming to the empty space where Sherry’s Soda Shoppe was at 2716 Welton St. in Five Points. Butcher Bar Market will be opening in two or three months, owner Brent Ratliff told What Now Denver

Ratliff is a butcher and pitmaster whose family has run a fully sustainable farm and cattle ranch in Mississippi for over 50 years. He lived all over the southern U.S. before moving to Colorado, and has worked in the food and beverage industry for several decades here.

“Menu offerings will be Southern dishes with a creative spin on each region of the South. We source from local farmers and ranchers that focus on sustainable, regenerative, and humane practices,” Ratliff says.

Permits that Ratliff filed are currently being reviewed by the city, and then the Welton St. space will need about four weeks of construction with minor alterations. He is working with local Denver architect Steven Greco of Enlight10 Architecture on the design, which will be “a mix between classic and modern.”

Google shows that the shop will be open from 10 a.m. to 7 p.m. Thursday through Monday.
