Noble Steakhouse Bringing a New Take on the Classic Steakhouse to Downtown Denver

Noble Steakhouse is preparing to bring steaks, seafood and an elevated atmosphere to 1525 Blake Street

Denver’s steakhouse scene is getting another addition, but Noble Steakhouse is looking to do things a little differently.

Noble Steakhouse is coming soon to 1525 Blake Street in downtown Denver, where the concept plans to put a modern spin on the classic American steakhouse. The restaurant’s website describes the experience as an elevated take on the traditional steakhouse, with an emphasis on Colorado ingredients, thoughtful design and a dining experience that goes beyond the plate.

The menu will center around steak and seafood, with Noble sourcing its cuts from Meats by Linz. The restaurant says its steak program will include everything from ribeyes and filets to American Wagyu, while the seafood side will include dishes such as Chilean sea bass and sushi.

Behind the menu is Chef Eduardo Valle Lobo, who serves as Noble’s menu engineer. According to the restaurant, Valle Lobo most recently served as Culinary Director for Frasca Food & Wine and was part of the team behind the acclaimed restaurant’s James Beard honors. His menu for Noble is expected to bring a combination of refined technique and bold flavors to the new steakhouse.

Chef Edgar Drago will lead Noble’s kitchen as executive chef. Drago previously served as Director of Operations and Chef at Denver’s Guard and Grace and also led Jacks on Pearl, where he developed its dry-aging program.

The restaurant’s social media has offered a few early glimpses of what’s taking shape, including a look at Valle Lobo working on the menu. Noble describes the project as one where the details – from the food to the atmosphere – are being considered intentionally.

That attention to detail extends to the space itself. Noble plans to feature refined interiors with rich textures and custom finishes, along with semi-private dining spaces and a large patio designed for everything from a night out to larger celebrations.

The restaurant will also have a private-events component, with several spaces available for corporate dinners, milestone celebrations and intimate gatherings. According to Noble’s website, its event spaces can accommodate groups ranging from 20 to 150 guests, including private dining rooms, semi-private areas and an outdoor patio.

A cocktail and wine program will round out the experience, with a selection of global wines and cocktails featuring Colorado spirits. Noble says the beverage program is intended to reflect the state’s growing distilling scene while complementing the restaurant’s steak and seafood offerings.

Behind the project is hospitality operator and developer Francois Safieddine, founder of Lotus Concepts Management, whose portfolio includes Denver concepts such as ViewHouse and My Neighbor Felix. Noble marks another addition to his restaurant and hospitality ventures in the city.

For now, Noble Steakhouse is listed as coming soon, with an opening date yet to be announced.
