Castle Rock may soon have a new place to kick back, grab a bite and bring the dog along.
Lazy Dog Restaurant & Bar is planning a location at 5949 Alpine Vista Circle, bringing its relaxed, mountain-inspired dining experience to the community. Its official website lists the restaurant as ‘coming soon’ while an opening date is yet to be announced.
The Castle Rock restaurant will bring Lazy Dog’s lodge-inspired take on American dining to the area. The concept was created by founder Chris Simms, who drew inspiration from time spent with his family in the Rocky Mountains and wanted to bring some of that relaxed, small-town mountain feeling into the restaurant experience. Gabriel Caliendo served as executive chef – principal of Lazy Dog since he helped found the concept in 2003.
Lazy Dog’s menu centers on made-from-scratch American comfort food, with a mix of burgers, sandwiches, salads, bowls and larger entrees. The restaurant also rotates seasonal offerings throughout the year, giving the menu a chance to change with the seasons.
For weekend diners, Lazy Dog also offers brunch, with a menu that includes breakfast favorites alongside dishes with the restaurant’s own twist.
The bar menu includes handcrafted cocktails, beer, wine and spirits, while happy hour offerings give guests another reason to stop in for a drink or bite.
And, true to the restaurant’s name, dogs are part of the experience, too. Lazy Dog welcomes four-legged guests on its outdoor patios and offers complimentary water as well as a dog-friendly menu featuring options such as grilled chicken or hamburger.
The restaurant’s mountain-inspired atmosphere is another part of the concept. Lazy Dog describes its restaurants as comfortable gathering places for everything from casual meals to evenings spent with family and friends.
