Happy Trails Coffee Co. Will Caffeinate Fort Collins Starting This Summer 

A new coffee shop is coming to Midtown by mid-year.

City records reveal a new coffee and cafe concept is coming to Midtown Fort Collins sometime this summer. Permits filed for Happy Trails Coffee Co. show the shop is being built in a ground-level space at the State apartment complex, located at 120 W. Stuart Street, Suite 3. 

Shop owner Lauren Storeby told What Now Denver they are in the early stages of planning and construction. She and her husband Shawn also own Snack Attack Specialty Sandwiches and Brews, which is next door and has been in business since 2017. 

The work that needs to be done in the space includes adding a cold prep kitchen, a coffee counter, and a railing to the patio, according to documents. 

Happy Trails Coffee Co. has a website up and running already, which shows their menu will include delicious breakfast and lunch offerings, such as muffins, açaí bowls, salads, sandwiches, and more. The coffee bar will have cold and hot drinks along with tea and matcha.
