Sắp Sửa Secures Colfax Spot, Will Open in a Few Weeks 

The eatery that was teased last year is coming to fruition.

Last year, it was announced that a concept called Sắp Sửa was coming to Denver, and that owners Anna and Ni Nguyen were looking for real estate. The couple found a location at 2550 E Colfax Ave. and announced that they will be welcoming patrons shortly.

“We’re only a few weeks from opening our doors,” an Instagram post from the company last week stated. “Sắp Sửa has changed in so many ways, but the goal has always been the same: to open a restaurant together and spend the rest of our lives cooking, mentoring and making food we want to eat.”

While originally they were hoping to open in Cherry Creek by the end of 2022, the Nguyens ended up leasing space on East Colfax, in the same building as the Tattered Cover Book Store & Cafe.

Denverites are excited about the restaurant’s opening, as the business already has fans before it is even running; Sắp Sửa has had a popular food truck locally and participated in Mile High Asian Food Week.
