Wild Eggs, the wildly popular breakfast, brunch, and lunch franchise, is opening its first Lone Star State eatery. According to a recently filed permit with the Texas Department of Licensing and Regulation, the new Wild Eggs will open in Cypress within the Cypress Creek Plaza at 9814 FRY RD, SUITE 240.

The permit notes that construction for the new Wild Eggs Cypress eatery has begun and is slated to wrap up by mid-January 2027. If permitting goes smoothly and the estimated $730,000 construction project stays on track, the new Wild Eggs should open by early next year.

“Interior tenant finish-out of an existing 4,107 SF suite for a restaurant (Wild Eggs). Work includes dining, kitchen, restrooms, and related mechanical, electrical, and plumbing,” the permit for the 4,107-square-foot Wild Eggs restaurant reads.

Wild Eggs franchisee Ben Rush, who was listed on the permit, is at the helm of the opening. What Now Houston briefly spoke with Rush, who confirmed the opening. Unfortunately, Rush was unable to share further details by the time of this publication.

“Breakfast is the meal everyone settles on. Not here,” the Wild Eggs website reads.

“We’re hard-boiled about the details and sunny about everything else.”

JD Rothberg and Shane Hall founded and opened the very first Wild Eggs location on Dutchmans Lane in Louisville in 2007. The scratch-kitchen, chef-driven breakfast-and-lunch restaurant focused on cooked-to-order morning meals at accessible price points. The cast-iron cinnamon roll and house-made hollandaise have been prepared fresh daily since day one.

“Nobody hand-cracks an egg for a stranger. You do that for people you love. For the regular in the corner booth who never has to say his order out loud. For the kid whose name you learned without trying. For the crew starting the early bird shift who need more than a full plate, they need a place that’s glad to see them,” the brand’s website reads.

“None of that’s policy. It’s personal.”

In 2015, Patoka Capital LLC acquired a majority stake in the company to support regional expansion.  In 2023, the Miami-based investment fund, PG Growth,  acquired Wild Eggs. Under this ownership, the group also acquired the fast-casual brand Crazy Bowls & Wraps in 2024 to expand its portfolio while keeping Wild Eggs as an independent brunch concept. Wild Eggs launched its official franchise program in 2024, signing its first development deal with long-time operator Travis Hall for locations in Lexington, Kentucky.

Wild Eggs now has at least 19 locations across Kentucky, Indiana, and Ohio. The brand is now expanding into Texas.

What Now also reached out to Wild Eggs CEO Andy Abbajay to learn more about the expansion plans. But we did not hear back by the time of this publication.

” We don’t cook for strangers. We just cook for people we haven’t met yet,” the brand’s website reads.

“Everyone deserves a place where they’re somebody. This is ours. Now it’s yours.”
