Ember & Iron, the restaurant from Chef Michael and Brittany Cooney serving up rustic American fare, has announced that it’s at work on a new location—and no, not the one you’re thinking.
Yes, there is a new Ember & Iron planned for the upcoming Village at Seven Pines development. It’s expected to open there in 2028, as What Now reported back in February.
This week, however, the Cooneys announced that another new location is opening at 62 Spanish Street in the St. Augustine Historic District.
“The property dates to the Spanish colonial period when it was the Don Pedro Fornells House,” says coverage by the Jacksonville Daily Record. “The structure was demolished in 2014 after it partially collapsed, and new construction on the property was completed in 2025.”
“The inspiration for Ember & Iron came from my and my wife’s lifetime of culinary and hospitality,” Chef Michael Cooney told What Now back in February. “It’s a style of cooking that’s really reminiscent of childhood. It reminds me of grilling with dad, throwing a few oak branches on the grill. It’s fresh ingredients, a simple way of approaching food.”
In St. Augustine, Ember & Iron will serve the full menu offered at the current location. It will also feature a seafood program influenced by the Cooneys’ other restaurant, Gemma Fish + Oyster.
