Just before Christmas, What Now reported on Miracle Eats, a new food hall—or “food collective”—opening at the Miracle Mile Shops.
“To complement Miracle Mile Shops’ recent renovations, we are thrilled to introduce a brand-new selection of unique and popular restaurants to the heart of the Las Vegas Strip,” Robert Buchanan, vice president and general manager of Miracle Mile Shops, said in a press release at the time.
Now, a handful of restaurants opening at Miracle Eats have been revealed, including beloved LV plant-based taco chain Tacotarian, Fat Sal’s, and Carnegie Pizza. In the coming weeks, What Now will take a closer look at several of the concepts headed to the new food hall.
Beloved Vegas-born plant-based taco chain Tacotarian is one of several restaurant concepts recently revealed as tenants in the Miracle Mile Shops’ upcoming Miracle Eats food hall. It will be the sixth location for the chain, which has four restaurants in the valley and another in San Diego, and its first on the Las Vegas Strip.
We assumed the menu at food hall location will be somewhat abbreviated, and so What Now asked co-owner Regina Simmons what can be expected for the Miracle Eats menu.
“We’re a removing a few things because the square footage is smaller, but we are going to keep the favorites,” Simmons said (to everybody’s relief). “So there will be our tacos, and things like our giant taco, the crunch wrap, those items we know people get really excited about.”
It’s a milestone for the brand, and for Vegas. “It’s OFFICIALLY official,” Tacotarian said in an Instagram post. “We will be the first ever fast casual plant-based restaurant on the Las Vegas Strip.”
And there’s more big news: this Tacotarian location will be serving up margaritas!
