Pasta & Pomo is cooking up something fresh for the Las Vegas Valley. According to a Clark County permit, the new Italian eatery is expected to open in Spring Valley within the Apache Plaza at 5165 S Fort Apache Rd Ste. 195.
The handmade pasta bar will take over the space once occupied by Squeeze In. The beloved breakfast restaurant permanently closed in the spring of this year after a decade of serving the Las Vegas Valley and its visitors. The brand shut its final eatery without notice. The quiet closure marked the end of the brand’s final remaining Las Vegas valley location. The sad departure made room for something fresh and new.
Pasta & Pomo is exactly that: fresh and new. The concept behind the upcoming eatery is a fresh, handmade-to-order pasta bar that will blend traditional Italian techniques with modern flavor profiles.
Behind the opening is the Zaretti Dining Group, founded and led by widely-acclaimed restaurateur and chef Massimo Zaretti. Best known for operating the beloved Italian dining concept Il Massimo Cucina Italiana in Ensenada, Mexico, Zaretti comes with more than 23 years of experience in corporate hospitality. Zaretti built a global career managing front-of-house operations for elite 5-star hotels and luxury resorts across Europe, Asia, and North America before opening his own flagship restaurant. Born in Rome, Italy, Zaretti immigrated with his family to the United States during his youth.
What Now Las Vegas reached out to Zaretti to find out more information about his exciting new concept. Unfortunately, we did not hear back by the time of this publication.
Pasta & Pomo already has an Instagram page with a few details, including that the new eatery is slated to open this year. But the awaited concept does not yet have a website. With no website or more information on its currently active social media pages, it’s hard to get into the specifics about the menu. But we do know that there will be pasta!
