PK Oyster Bar has become a beloved Las Vegas staple. The family behind the eatery has served the community since 2020, first as a ghost kitchen, then as a brick-and-mortar restaurant in the Historic Commercial Center District. Now, the brand is embarking on a second opening.
“We have always wanted to be in Chinatown, but it wasn’t financially sustainable, being our first brick and mortar,” co-owner and founder Rachelle Razon said in an interview with What Now Las Vegas.
The plan is to open the next PK Oyster Bar in the Jade Promenade in Chinatown, just west of the Las Vegas Strip. Situated near Spring Mountain Road and Wynn Road, Jade Promenade can be found at 3845 W Pioneer Ave. Due to the location, accessibility, foot traffic, and customers, Razon said that the multi-purpose retail center is the perfect spot for the next phase of the brand.
“Our hope is to bring people together through delicious food with genuine hospitality. Create a welcoming space where everyone feels like they are going somewhere familiar, be part of celebrations, first dates/ a date or lasting memory,” Razon said.
Razon brought the concept to life with her husband, Chef Ramon, back in 2020, featuring authentic Cajun and Creole cuisine developed from his 15+ years of cooking at Las Vegas’s famous Palace Station Oyster Bar. Moving from their home kitchen to a commissary and ghost kitchen, before opening the first brick-and-mortar PK Oyster Bar in New Orleans Square in the Historic Commercial Center District at 900 Liberace Ave Ste H102, the eatery has continued to serve the community from the historic district ever since.
“We’re a neighborhood restaurant that brings people together over fresh seafood, flavorful dishes, and great hospitality. Known for oysters, an inviting atmosphere, and shareable portions for a great price,” Razon said.
“To the core, a small family business, you can see me doing inventory deliveries, tasting oysters, washing dishes, taking orders, expediting, my grandson running around the dining room, laughing all the time with FOH and BOH, yelling inside the walk-in cooler, but still excited and happiest when I’m at PK.”
But as the brand continues to develop, changes are indeed inevitable. The hope is to open the new PK Oyster Bar in Spring Mountain while continuing service at the current open location. But Razon shared that this is not a guarantee.
“There’s always that dream of having multiple locations, but I move slow, get settled, master service and the food before I do anything. Hence, the start from home kitchen to 1 year at commissary to 1 1/2 years at ghost kitchen, then to the current brick and mortar,” Razon said.
“We would love to keep both open without compromising quality and service. In a perfect world, we would love to. So we’re keeping fingers crossed.”
And quality and service are indeed what PK Oyster Bar is all about. Famous for their pan roasts, gumbos, voodoo pasta, and, of course, the variety of oysters, the eatery drew me in with its great eats and affordable prices, and that’s how What Now found out about the new location.
“We’re serving grilled oysters with different flavor toppings. So those have been selling out,” Razon said.
“Beyond the food, we are committed to supporting our community through meaningful connections, exceptional hospitality, and giving back whenever possible. Most of all, the positive impact on the people we serve.”
Embedded in the community, the restaurateurs discovered the location for their new opening through a local social media influencer.
“Actually, from a content creator, lvfoodgoddess,” Razon said.
“She’s been supporting a lot of Las Vegas small businesses like no other. Just a great person all around.”
PK Oyster Bar is anticipated to open in Chinatown within the Jade Promenade at 3845 W Pioneer Ave by Fall 2027, and there will be a huge celebration.
“We would love to invite everyone to come, enjoy, and eat amazing food!” Razon said.
“Celebrate bold flavors, fresh oysters, and the Las Vegas community/culture without the hassle of long lines and smoky areas. We welcome families, friends, and large parties.”
