A brand new coffee shop, Drip and Dolce, is ready to open in West Hollywood, at 8807 Santa Monica Boulevard.
The new concept, owned and operated by Trifecta Hospitality Group, is set to move into the former home of Hollywood Burger, which closed in February after four years in the Rainbow District, according to WeHo Online. Owner Morgan Salmans tells What Now Los Angeles that she hopes to open this concept by the end of the month, but couldn’t provide an exact opening date due to inspections and the city planning department. This new concept will feature a breakfast menu in a welcoming community space, including fresh and unique couture croissants and delicious coffee.
“Drip & Dolce specializes in couture croissants and specialty coffee, that’s the heart of our concept,” Salmans tells What Now Los Angeles. “Guests can expect inventive, seasonal croissant flavors like our Animal Circus Cookie Croissant and the Banoffee Croissant, alongside a rotating lineup of both sweet and savory options. We’re also introducing a unique take on croissants with creations like the Croast (our croissant-toast hybrid) and Croffles (croissant pressed into a waffle), giving our guests new ways to enjoy this classic pastry. In addition to our pastries, we offer a thoughtfully curated breakfast and lunch menu, fresh juices, and house-made lemonades. Everything is made in-house using locally sourced ingredients. Nothing on our menu is packaged or processed. And if you know, you know… we might just have a secret menu in the works, featuring croissant cones for ice cream, affogato, and more.”
Salmans tells What Now Los Angeles that this concept was inspired by a love of the in-between moments—quick coffee runs, solo breakfasts, and slow mornings that deserve a touch of indulgence. She was drawn to elevated and inviting spaces, and set out to create one that seamlessly blends creativity with comfort. The croissant symbolized that vision for her: a timeless classic with endless potential for reinvention. Paired with quality coffee and intentional hospitality, it became the foundation for something uniquely different. Drip & Dolce, she explains, is not just about what’s on the menu—it’s about making everyday moments feel a little more beautiful, playful, and delicious.
Salmans explains that Drip & Dolce’s specialty lies in the creative reimagining of the croissant. From couture croissants to Croasts and Croffles, the team takes this classic pastry and gives it playful, elevated twists—think Circus Cookie croissants, croissant cones filled with ice cream, and pressed croissant waffles. On the beverage side, they serve specialty coffee brewed with locally roasted beans and house-made seasonal syrups. But what truly sets Drip & Dolce apart, Salmans notes, isn’t just the quality or creativity—it’s their ability to take familiar favorites and transform them into something unexpected. Their approach is rooted in intention, consistency, and hospitality to make every visit feel like a small, memorable escape.
“We’re designing the space to feel like a moment of escape, clean, modern, and inviting, with artistic touches and an emphasis on hospitality,” Salmans tells What Now. “We’re also committed to working with local suppliers and producers to keep the quality high and the impact community-centered. Drip & Dolce isn’t just a cafe, it’s a curated experience. The space was designed to offer a sense of both pause and play: Art Deco elements meet modern lines, with a moody, stylish color palette of deep blue and soft blush tones. Inside seating and a sunny patio allow for both connection and quiet, whether you’re meeting a friend or enjoying a solo moment. The energy is upbeat but intentional, with a soundtrack of remixed French-American music and modern pop creating a familiar-but-fresh backdrop. From coffee flights to seasonal surprise flavors and custom packaging, every detail is crafted to feel personal, elevated, and just a little unexpected. As we settle into the neighborhood and a community we love, we’re excited to introduce local collaborations, community moments, and creative activations that turn a simple visit into something more meaningful. And yes, there may just be a few off-menu secrets for those who know where to look.”
Hollywood Burger officially opened in 2021, taking over the space formerly occupied by George’s Greek Grill. The West Hollywood location was the third Hollywood Burger outlet in Southern California. According to an employee, the closure was due to rising rent costs and insufficient foot traffic. With this closure, the only remaining Hollywood Burger is the original location at 6250 Hollywood Boulevard.
Drip and Dolce isn’t the only new tenant coming to the area. Armonie Coffee & Sandwich is set to open at the former Coffee Bean & Tea Leaf location at the corner of Santa Monica Boulevard and Hancock Avenue. The new spot is expected to be a bakery, coffee shop, and cafe. Sources indicate that the same owner plans to open a Mediterranean cafe near the former Five Guys space across from Schmitty’s. While an official opening date has not been announced, the building has been freshly painted, and a new awning is already in place.
