Health-based fast-casual brand Carrot Express is expanding again in New York. It has signed a lease for a 2,000-square-foot space in Nolita at 100 Kenmare, according to the New York Business Journal.
Michael Schatten, SVP of operations for Carrot Express, confirmed the new location in a phone call with What Now New York. He said the Nolita location is part of the brand’s larger goal to expand extensively in the New York market in the next couple years.
“For our future growth, we see plenty of room still in the South Florida market, and down the road, we see Manhattan and Brooklyn as large opportunities for growth,” Schatten said. “Moving forward, we want to get big in New York City.”
Mario Laufer founded the brand in 1993 inside a gas station in Miami Beach. The brand aims to focus on providing a healthy menu featuring high-quality ingredients and fresh produce, according to its website.

The menu features all-day breakfast items such as overnight oats and breakfast burritos; acai bowls; wraps and sandwiches; loaded sweet potatoes; power bowls; healthy burgers; smoothies; freshly squeezed juices; coffee; and bakery items.
Right now, Carrot Express has 24 locations in South Florida and three in New York City. The current New York City locations include spots in the Flatiron District, Bryant Park and along Lexington Avenue. Schatten shared that there is another location heading to Brookfield Place that they expect to open within the next month. The Nolita location will be the fifth New York City spot for the brand.
Schatten said that right now they are too early in development of that location to provide an opening timeline.
