A taste of Denver is making its way to New York City this fall.
Burrito Bear will take over the former Wild Ginger space at 380 Broome St. in Lower Manhattan.
“We grew up in Denver eating the style of breakfast burritos that have what’s called green chili in it and on it. People smother it. One would think it’s just a chili pepper, but it’s actually a pork stew. We miss it a lot,” partner Ryan Shea told Whatnow New York City.
The new fast-casual spot will highlight this exact style of burrito, loaded with all the works. While the menu is still in development, burritos will feature fillings ranging from bacon and chorizo to chicken, eggs and cheese. Fresh and affordable, the burritos will offer an easy meal to grab before work.
“This is a type of Mexican cuisine that is beloved in Denver. Breakfast is something New Yorkers love. There’s a great bagel culture here, but when it comes to breakfast burritos, we want to bring what we love to the city,” Shea said.
The space will also pay homage to Denver, with the mascot serving as the star of the show.
“We’re definitely going to have a lot of Denver iconography, but also our name, ‘Burrito Bear,’ is very playful. We’re going to be centering around our mascot, which is the bear with a cowboy hat. We’ll have a lot of fun items that will make people enjoy coming into the space,” he said.
The team looks forward to joining New York City’s robust food scene.
“I think New York City is really a wonderful place to be a food and hospitality entrepreneur because there’s such a dedicated group of people who love trying new things and love seeing the tales of cuisines from all parts of the world. I’m just really excited to see what people think and see how it differs to the already phenomenal Mexican offering in the city,” Shea said.
Burrito Bear is currently under construction and plans to debut this fall.
