Set to open in a Chinatown cellar space, a restaurant called Calypso plans to combine East Asian and Latin American flavors. According to a sample menu provided to Community Board 3, Calypso will serve inventive dishes such as char siu croquetas, plantain dumplings, and wok-tossed Lomo Saltado with hand-cut noodles. The sample menu also noted the use of an open-fire grill that will be used to cook octopus and specialty sausages. Located at 11 Doyers St. — the former home of the Mexican speakeasy Blue Agave Pulqueria — Calypso will have 13 tables and a standalone bar. The owners also plan to cultivate a nightlife scene, hosting DJs up to eight times per month and accommodating private parties. Doors will open daily at 4 p.m., and there are plans for a happy hour to run until 7 p.m. Service is slated to extend until 2 a.m. on most nights.
